Who doesn't like a hearty breakfast? And when it involves scrambled eggs, Indian style, there's plenty to look forward to! There are many variations of this delicious dish. Many permutations and combinations, but this is how I cook mine to perfection.

Masala Anda Bhurji (Spiced Eggs - Scrambled)
Ingredients:
1 tbsp Coconut oil
1 large onion finely chopped
A few curry leaves, finely chopped
1 green chilli
1tsp ginger garlic paste
1 medium sized firm tomato finely chopped
Spice Powders:
1 tsp Cumin powder
1/2 tsp Pepper Powder
1/2 tsp Chilli Powder
Salt to Taste
2 eggs - well-beaten
2 tbsps milk
I tbsp tomato Ketchup
Let’s Get Started
In a medium sized utensil heat some coconut oil
Add onion and curry leaves and green chilli.
Sauté till the raw smell of onion goes away.
Add ginger garlic paste and stir well.
Add tomatoes and sauté till a little soft
Add all the spice powders
Add salt
Now add the beaten eggs and keep stirring slowly and in a zig zag haphazard manner to scramble the egg.
Add 2 tbsps of milk while the egg is still runny
Keep stirring vigorously till the egg cooks and there’s not much liquid left.
Check if salt is required. If yes, do add some.
Add tomato ketchup and stir well.
Your Masala Anda Bhurji is ready!
Make sure that when you have it with bread, pav or chapati, that butter is generously applied. Butter just adds more flavour to an already lip-smacking bhurji. Enjoy!
